There are several random encounters during Baldur's Gate II: Shadows of Amn and Baldur's Gate II: Throne of Bhaal, which all use the same maps.
Encounters[]
Some encounters occur only once and only if the game has not progressed passed a certain chapter. One of the outdoor encounters has four Trolls in addition to the random encounters.
As is normal with random encounters - the party is not allowed to sleep or save in these areas and once the map is exited the journey will continue, which can lead to another random encounter.
Random encounters do not always trigger, but when they do it is when traveling from one area on the world map to the next.
Suna Seni[]
Suna Seni is a bounty hunter working for an evil wizard that is hunting the Bhaalspawn and party. Her Slaver group includes a fighter named Eldarin, and a wizard.
She is an old flame of Valygar Corthala and when he's in the party there is some additional dialogue. Valygar tries to convince her not to honor the contract. This inevitably fails, but she does apologize for the inconvenience. Given Valygar's alignment and Suna's association with slavers, it is not hard to see why the relationship failed.
This is the first encounter and you only get one chance to get it. The dialogue with Valygar is therefore obscure, as it takes at least three world map journeys (slums, city gates, Umar Hills) to have Valygar join the party.
Renfeld and the Thugs[]
The second encounter with three Thugs and a Mage while traveling between Athkatla's Districts leaves a body behind; a man named Renfeld.
The short side quest to bring the poisoned Renfeld to his friends also leads to another side quest involving Xzar finding out what happened to his companion Montaron.
Solving that, especially with Jaheira in the party, leads to yet more quests involving the Harpers and a whole lot of misdirection.

Mod content[]
Installation of the Sword Coast Stratagems Mod and the "Improved Random Encounters" component make revisions to most BG1/BG2/BGEE encounters. From the Mod's Readme: This component adds a little more variety and challenge to the "You have been waylaid by enemies" encounters. The main point of this component was not so much to make random encounters more difficult (though it does that too, to some extent) as to make them less repetitive - there are now about a dozen encounters, and the order in which they occur is somewhat randomized.
