Bolts of Polymorphing are rare, expensive, and occasionally dropped as treasure (in single units). The bolt is available in the first opus of Baldur's Gate.
They can be found as random treasure. More details linked here.
Gameplay[]
The bolt strikes for standard 1d8 Missile damage as any other crossbow bolt and forces a save vs petrify/polymorph.
If the target fails, it is transformed into a specific version of a common squirrel, although it is even weaker and more defenseless than the natural animal.
The bolt's polymorphing effects can be blocked by Magic resistance.
The squirrel creature is so fragile and easy to hit, that any damage will slay it.
The polymorph lasts for about 42 days game days, but it can be reverted with a successful Dispel Magic effect.
While these bolts exist in Baldur's Gate II files, they are entirely unused by the game, and aren't included as random treasure either.

This bolt is now provided into BG1 (as well as numerous other items) with the installation of the Unfinished Business for BG1 mod's revisions to various store stocks.
A limited number of the bolt of polymorphing can be purchased, such as at Ulgoth's Beard Inn, from Thalantyr the Conjurer and Sorcerous Sundries.
It will still potentially appear as a random treasure as well.
